
Alam sari is unique in many ways. The decor and many other
features have been carefully selected to reflect both
the Indonesian and Balinese setting as well as a philosophy
which seeks to promote beauty and good taste along with
your comfort and safety. In addition, environmental responsibility
and sensitivity to the Balinese culture and the life of
our neighbours in the village of Keliki are an integral
part of the planning and operation of alam sari. Here
are some examples:
FOOD
A number of the items on our menu are Indonesian or
Balinese and guests are encouraged to try them. Besides
the wide range of well known tropical fruits, Bali also
grows fruits such as salak, nangka, rambutan, sirsak,
mangosteen and many others. When these are in season
we try to incorporate them into our menu. Bali is also
renowned for its coffee and its natural vanilla which
is the pod of an orchid and grows locally. All coffee
and vanilla used in the restaurant is grown in Indonesia.
Indonesia is also renowned for its spices: cinnamon,
cloves, nutmeg and mace are the best known. We use these
flavours also in our cooking, baking and drinks.
In the higher altitude around the town of Bedugul,
a wide variety of fresh fruits and vegetables more commonly
seen in temperate climates grow. These along with tropical
fruits and vegetables are bought and used fresh in all
our cooking. No MSG or other artificial food additives
are used in our kitchen. By using only fresh and high
quality ingredients and maintaining a high standard
of hygiene in preparing, cooking and serving our food,
guests are guaranteed interesting yet nutritious and
safe food at alam sari.
FURNISHINGS
All furnishings at alam sari have been made and bought
in Indonesia using Indonesian produced materials. Most
of the furniture is teak which contrary to popular belief
is not a timber of the tropical rainforest but a commercialy
grown plantation timber cultivated mainly on the island
of Java.
Curtaining, cushions, bedspreads, staff uniforms and
table linen are all made of locally woven cotton. Their
colours reflect the bold colours found in the batik
paintings of the Japanese artist, Mahyar, whose work
decorates every guest room as well as the restaurant.
Many of the furnishings of the restaurant and bar area
are antiques. All are made of teak and come from the
islands of Madura and Java. The intricately carved wall
in the restaurant comes from a house in the town of
Kudus in central Java. This town is renowned for its
antique and finely carved houses, few of which now remain.
Other natural materials used in furnishings include
bamboo and lontar palm leaf lamp shades, coconut wood
pillars and kaji mas timber from Sumbawa for much of
the bedroom furniture. Kaji mas is a tropical rainforest
timber which is being responsibly milled and replanted
by the Tambora Wood Company.
MATTRESSES
We believe you deserve a good night's sleep. Natural
rubber is the most durable, hygienic and comfortable
material for mattresses so all our mattresses are made
of the finest quality natural rubber manufactured in
Indonesia by P.T.Dunlopillo.
OWNERS
Alam sari is owned in partnership by Hugh and Aprile
Collett, New Zealanders who have lived and worked in
Indonesia for a number of years, and Bapak Dr. I Wayan
Mastra, an Indonesian citizen who lives in Bali and
is also the current Bishop of the Protestant Church
in Bali. In cooperation with the people of Keliki, alam
sari was developed and exists as a place to not only
relax in comfort and security but also enjoy the food,
culture and atmosphere of a beautiful corner of one
of the most beautiful islands on earth. If for any reason

PAINTINGS
All paintings and other graphic art work in the bedrooms
and public areas at alam sari. are original and part
of the personal collection of the owners.
Art collectors will be pleased to know that the artists
of Keliki produce some of the finest miniature paintings
in Bali. The staff can easily arrange a visit to one
of the artists studio homes.
PLANTS
Our gardens are a reflection of the lush greenery and
colour found all over Bali. Guests are free to inspect
and enjoy the variety, colours and aromas of the gardens.
All our guest rooms have the Indonesian names of trees
and plants found in Bali. Most are found in our own
grounds.
VILLAGE CO-OPERATION
As a part of alam sari's commitment to assist the residents
of Keliki, we not only engage some of our permanent
staff from the village but also use villagers to play
our Balinese music throughout the day, offer traditional
massage services to guests and also guide guests on
walks and bike rides through and around the village.
We encourage our guests to patronise these services
as well as buying some of the handicrafts that the crafts
people of Keliki produce.
WASTE
All waste at alam sari is disposed of efficiently and
without environmental pollution. Toilet, bathroom, laundry
and kitchen effluent is treated in the Eco-system waste
disposal tanks located behind the office. Using biological
agents, waste is treated until only clear water suitable
for garden watering and a small solid waste residue
is left. No waste goes to ground to cause pollution
of the soil. Food waste from the kitchen is used for
animal food by the local villagers, paper, plastic abd
bottles are recycled and other refuse is disposed of
at the appropriate waste disposal sites. No pollution
from alam sari enters the nearby river or affects our
immediate environment.
WATER
Hot water in guest bathrooms is heated by Rheem solar
water heating panels. Water in the swimming pool is
regularly tested and chlorinated to ensure safe swimming.
